I have been wanting to mix up some homemade salsa. Anyone out there have any good recipes?

my take to the lake salsa recipe, for what its worth :)

1 large can (from Sams) of
Whole Peeled Tomatos
Big package of green onions (sliced into 3 inch sections)
6 cloves of garlic
2-4 Jalapenos (depending on your heat tolerance I use 3)
2 cans of rotel
handful of chopped cilantro (again depending on if you like cilantro)
juice from 4 limes
1/4 cup vinegar
splash of olive oil
tablespoon of cumin
salt and pepper to taste

if you want to make it extra good roast the japs over the grill and add them instead for a smokey heat

put it all in a big food processor and have at it, you cna make it as chunky or as fine as you want it , add the bayches to a large bowl and combine to mingle all flavors

I use Santitas white corn chips, they are the best store bought, in my opinion

Since both of you are from Kansas I am hijacking this thread.

The next time you are in Salina there is a Mexican joint about a half block north of Crawford on Broadway called La Hacienda. Stop in and order the flour chips and the "old" salsa. You will think you died and went to Salsa Heaven. I want to know where they get the flour tortilla's from.

While there order a bean n beef tastoda or Nacho Deluxe.

My favorite home-cooked salsa:

3 ears of corn (good sweet corn, not the canned crap)
1 Tbls peanut oil
1/2 cu. julienned onion
5 jalapenos
5 Fresno or red jalapeno (if you can find them. I've used chili powder as a substitute)
1 cu. cilantro (optional)
1 tbls lime juice
1/2 tsp ground coriander
1/4 tsp salt.

Roast the peppers over a fire or with a small torch. Peel and julienne
Remove the corn from the cob with a knife and heat in a saucepan until the water has just evaporated. In a separate pan, heat the oil and add onion until they carmelize. Add all ingredients together.

I've used this as a side to chicken and as a dip. I've also modified this by adding black beans and then:

Grill a halibut steak with some lemmon pepper seasoning. Flake apart into 1" chunks. Heat tortillas and put the halibut, salsa and some white cheese and lettuce. Best Fish Tacos EVER!! Da bomb!!

My Homemade Salsa

1 can diced tomatoes
1 can diced tomatoes/ with green chilies ( ROTEL )
1/2 cup chopped onions
sliced jalapenos to taste
1 teaspoon of salt
1 teaspoon of cumin
1 teaspoon of sugar
blend well
