View Full Version : Black bean corn relish/Dip

This is an awesome summertime snack or side dish

1 Can black beans rinsed and drained
1 Can white sweet corn drained
1 Red Pepper Chopped & Diced
1 Medium white Onion diced
1-2 Jalapeno's fine chopped
1/4 cup or so fresh Cilantro chopped
Juice from 1/2 a Lime
1/2 ts salt
1/2 ts pepper

Mix all, chill for a few hours while the flavors congeal and serve with "scoops" they hold more of the good stuff.

My wife has a similar dip that also includes diced tomatoes. Very good, healthy snack to wash all that beer down![smilie=crazy]

I make one that has all the same ingredients except that you take a propane torch and "roast" the jalapenos until the skin blisters (the jalapenos, not your fingers). Wash off the blistered skin and julienne. Gives it a nice smokey flavor. One of my favorites![smilie=trink39]

Throw in some Maters and thats my salsa recipe, Avacodo sliced up and thrown in just before serving is good also.

DANG IT!!!!!!! I so did not want to stop by the grocery store on the way to the lake but that sounds to good to pass up!!
