For a perfect steak everytime on the Big Green Egg. You will not find a better steak anywhere:
Ingredients:
2 steaks, 1-1/2 to 2-inches thick, preferably rib-eyes
1/4 cup kosher salt
1/2 tsp white pepper
2 tsp black pepper
1/4 tsp cayenne pepper
Trim the steaks of any excess fat. Mix all of the dry ingredients together and apply to both sides of the steaks. Allow to stand at room temperature for 30 minutes before grilling.
Set the EGG® up for direct cooking. To increase sear marks use a cast iron cooking grid; for extra flavor add wood chips.
When the EGG is heated to 650°F, place the steaks on the grill and sear for two to three minutes.
Open the lid (see the note regarding cooking at high temperatures) and flip the steaks onto a new section of the grid. After two to three more minutes, flip the steaks once more.
Completely shut down the EGG by closing the damper top and draft door. Let the steaks continue cooking for 3 to 4 minutes, until they reach the desired internal temperature (check with a meat thermometer).
Remove the steaks and let them rest for 5 minutes before serving.

Another favorite is the beer up the butt chicken.
Stuff beer cans 1/4 full of liquid up the butts of the birds
Brush with melted butter. No other seasonings or sauce needed, but you can
add seasoning salt if desired.
Set grill temp (Big Green Egg) to 210 to 220
Stand the birds on the grill
Take them to an internal temp of 150 (using a remote thermometer).
Shut the top and the bottom air shutters and leave for 20 minutes or so
The internal temp will rise to 165-170
Pull the birds, pull them apart and carve them up
Let it set for 15 minutes covered with foil
eat like a fat girl at a twinkie factory!

I do it for fun now that I have have stopped competing , but I still do a bunch of cooks/ catering for people I know, I love to cook and if I did it for a living it would just piss me off :mrgreen:

If you ever get one let me know, I've been collecting all the BGE recipes I can find, I've got a chitload.
What are your favorites? I have a BGE both at home and at the lake, but I typically only have time to use the one at the lake.
What is the best size BGE if one was looking to get one? I once bought the smaller model weber gas grill as most of our cooking is for two, it performed terribly compared to the larger models.
Is bigger better with these grills as well?

The title of this thread made me think of this, many may know it. Boil your brats in beer and onions, then put the brats and onions in a ziplock bag. All you need is a little grill while out boating and brats are done in about 10 minutes with less burning. And the flavor, yummy....
Whew, that looks good, now I'm going to have to run up to the store and get a couple of rib-eyes and light up the ol' Grille tonight.

Simple favorite.
peeled shrimp
stick em on skewers
brush with olive oil
sprinkle with cajun spice
grill for 3-4 minutes
